The dandelions are in flower here in southern Ontario and we couldn’t be more excited! Not only for making medicine (infused oils and tinctures), but for baking and cooking too. Today Monkey Man and I took to the backyard to pick some flowers to make dandelion flower cookies. They turned out great and he loved them so much we thought we should share the recipe.
Make sure you are harvesting flowers from areas that are free from pesticide use and spraying!
Ingredients
- 1/2 cup coconut oil
- 1/2 cup honey (local if possible)
- 2 eggs
- 1 tsp vanilla
- 1 cup whole wheat flour (gluten free flour mix can be substituted)
- 1 cup rolled oats
- 1/2 cup dandelion flower petals
Servings: cookies
Instructions
- Remove the petals from the dandelion flower and discard (compost) any green parts
- Preheat oven to 375 degrees
- Mix the oil and honey and then beat in eggs and vanilla
- Stir in the flour, oats and dandelion flowers
- Drop the batter by large tablespoons full onto a parchment lined (or oiled) cookie sheet
- Bake for 10-15 minutes (they took 11 minutes in our oven)
- Let them cook and enjoy!

Can you replace dandelions with other kinds of flowers? And if so which kind?

I have never substituted the flowers for anything else in this recipe. That being said, I imagine any edible flowers could be substituted. Good luck!

How can I clean the flowers?

When I bake with dandelion flowers I don’t usually wash them because I can never get them dry and it messes with the wet/dry ratios in the recipes. I dust them off well and ensure that there are not bugs on them. My lawn is not sprayed and I do not live anywhere near an area of concern when it comes to pesticides.
My only suggestion would be to rinse them in a vinegar and water solution (4 parts water to 1 part vinegar) and do you best to dry them as well as you can.

Do you melt the coconut oil first?
I don’t no. I use my stand mixer and mix it with the honey until they are creamy.

Hmm, mine was melted but cooled from the house being warm overnight. The cookies aren’t looking like cookies..they’re still in the shape I dropped them onto the sheet in…is there supposed to be baking soda or something in them?
No I’ve made these yearly for 4 years now and I’ve never added baking soda to them. They don’t expand much, but they are still tasty. Did they taste okay? I do mill my own flour so perhaps that is the difference? I know it’s fluffier than store bought flour.
