Ingredients
  • 1/2cup coconut oil
  • 1/2 cup honey(local if possible)
  • 2 eggs
  • 1tsp vanilla
  • 1cup whole wheat flour(gluten free flour mix can be substituted)
  • 1cup rolled oats
  • 1/2cup dandelion flower petals
Instructions
  1. Remove the petals from the dandelion flower and discard (compost) any green parts
  2. Preheat oven to 375 degrees
  3. Mix the oil and honey and then beat in eggs and vanilla
  4. Stir in the flour, oats and dandelion flowers
  5. Drop the batter by large tablespoons full onto a parchment lined (or oiled) cookie sheet
  6. Bake for 10-15 minutes (they took 11 minutes in our oven)
  7. Let them cook and enjoy!
