  • 3/4 cup of raw honey (local if you can get it)
  • 1 cup of lemon juice (from fresh lemons preferably)
  • 4-5 cups of cold water (to taste)

Instructions

  • Pour your honey into a one litre mason jar and add your lavender flowers
  • Place a knife in the jar (to absorb the heat) and pour 2 cups of boiled water into the jar, stir well until the honey dissolves
  • Allow to sit for a minimum of 10 minutes (up to a few hours depending on how strong you want your lavender taste)
  • Strain out the lavender flowers and let cool
  • Pour your lavender sugar water into a pitcher and add your lemon juice
  • Top up with the desired amount of cold water
  • Serve with ice

 

Notes:


  • If you find the lavender taste too strong (soapy as some describe it), drop the amount of lavender flowers down to 2 tbsp
  • If you don’t have honey or cannot consume honey you can use organic cane sugar or coconut sugar instead
