Ingredients
  • 1/2cup uncooked quinoa
  • 1medium acorn squashhalved and seeded
  • 1/2cup walnutschopped
  • 1/2cup dried cranberries
  • 2-3tbsp maple syrupto personal taste preference
  • 1/4-1/2tsp ground cinnamonto personal taste preference
Instructions
  1. Combine one cup of water and 1/2 cup of uncooked quinoa in a pot. Bring to a boil and reduce to a simmer for 15 minutes. Remove from heat and allow to sit covered for 5 minutes.
  2. Mix warm quinoa with maple syrup, cinnamon, cranberries and walnuts. Start with 2 tbsp of maple syrup and 1/4 tsp of cinnamon. Add more to taste and based on your personal preference.
  3. Cut your squash in half and scoop out the seeds. Stuff each squash with the quinoa mixture. Leftover can be served as a side.
  4. Bake in a covered dish for a minimum of 45 minutes or until squash is tender. We find this takes at least an hour depending on squash size.
