1/4 cupmilk (of choice) or waterroom temperature

1/4tspground nutmeg
1/4tspground allspicecloves can be substituted
1tspbaking soda
1tspvanilla extract
1/2tspsalt
2cupsspelt flour1-3/4 cups if you are using all purpose flour
1/2cupchocolate chips, nuts, seeds, raisins etcmix-ins are optional
Instructions
Preheat oven to 325°F and prep your 9×5 inch loaf pan
In a mixer or large bowl whisk together oil and honey. Add eggs and continue to whisk. *eggs will need to be room temperature or the coconut oil will solidify – if this happens simply warm up your ingredients gently *
Add pumpkin purée, milk (or water) and vanilla continuing to whisk.
In a separate bowl combine flour, baking soda, spices and salt. Mix well.
Combine dried ingredients with wet until just combined. If you If you are adding mix-ins gently fold them into the batter.
Pour the batter into your prepared loaf pan.
Bake for 55 to 60 minutes – testing with a toothpick at 55 minutes. Let the bread cool in the loaf pan for 10 minutes and then transfer to a cooling rack to cool entirely.
