Ingredients
  • 1cup rolled oatsuse gluten free if preferred
  • 2 cups whole wheat flour/oat flourwe grind gluten free oats into flour
  • 1tbsp baking powder
  • 1/4tsp sea salt
  • 1-1/2cup milk of choicewe use almond
  • 2 eggs, beaten
  • 6 tbsp melted buttercoconut oil works well for dairy free folks
  • 2tbsp honeyraw and local if possible
  • 1tsp vanilla extract
  • 1cup dandelion flowers
Instructions
  1. Forage for your dandelion flowers. Ensure that you remove as much of the green portions of the flowers as possible leaving only petals. Harvest your dandelions from unsprayed, clean and urine free areas.
  2. Combine all of your dried ingredients (oats, flour, baking powder and salt) into a large mixing bowl or the bowl for your stand mixer. Mix until everything is incorporated well together.
  3. Melt your butter or coconut oil on the stove while you beat the eggs and measure out your milk, vanilla and honey. I often combine everything into a large measuring cup.
  4. Add your wet ingredients to your dried and mix until everything is well incorporated.
  5. Add your dandelion flowers and fold into your batter.
  6. We add a hefty scoop of batter to the waffle iron and cook until browned (every waffle iron is a bit different so I trust you know how to use yours 😉 )
  7. Serve hot with butter, maple syrup or your favourite waffle topping.
