The dandelions are in flower here in southern Ontario and we couldn’t be more excited! Not only for making medicine (infused oils and tinctures), but for baking and cooking too. Today Monkey Man and I took to the backyard to pick some flowers to make dandelion flower cookies. They turned out great and he loved them so much we thought we should share the recipe.

Make sure you are harvesting flowers from areas that are free from pesticide use and spraying!

Ingredients
  • 1/2 cup coconut oil
  • 1/2 cup honey (local if possible)
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup whole wheat flour (gluten free flour mix can be substituted)
  • 1 cup rolled oats
  • 1/2 cup dandelion flower petals
Servings: cookies
Instructions
  1. Remove the petals from the dandelion flower and discard (compost) any green parts
  2. Preheat oven to 375 degrees
  3. Mix the oil and honey and then beat in eggs and vanilla
  4. Stir in the flour, oats and dandelion flowers
  5. Drop the batter by large tablespoons full onto a parchment lined (or oiled) cookie sheet
  6. Bake for 10-15 minutes (they took 11 minutes in our oven)
  7. Let them cook and enjoy!
